For example, chicken enchiladas, roast the chicken right in the dutch oven, remove all the vegetables (roasting it on a bed of mirepoix) and you have a nice chicken base. Add all your enchilada ingredients and cook on the stove.
The best thing about dutch ovens are they are hella easier to clean than a lot of roasting pans. I have a stainless steel roasting pan and it's a bitch to clean, and I can only really use it for one thing, roasting... not much of a multi-tasker.
