Meet looks better and tastes better if the blood is drained while the animal is still alive. Some "brands" even go to extra lengths to make sure to drain as much blood as possible before the animal dies.
If the heart stops pumping immediately, then meat/muscle won't be as "even" and nice looking. I'm not sure how to describe it actually.
But that's the reason they don't just use electrical shock to kill the animal in an instant.
Pretty fucked up, but that's life. Such approach simply makes the end product more appealing to the target audience.
