Question How's "email marketing" different from SPAM?

Hi guys,

What seperates email marketing from traditional SPAM?
As far as I know SPAM is:

1) Unsolicited
2) Commercial

Who in their right mind would "sign up" (especially double opt in) to receive "offers" in their email box?

I'll sign up for products I trust but not for "special" offers. I find special offers more on the SPAM way of things
