Just wondering if it's worth all the trouble of making it yourself? I'm guessing it would cost $10-12 for a 2lb london broil and ingredients. And then whatever these nesco dehydrators go for.

Man this just got me wanting some beef jerky. Just ordered a huge pack online.

Yeah I was comparing what it would cost/time involved to just buying 1-5lbs off ebay. The only thing is you really don't know how they cook it and what goes into it that way.
 
I've made it several times in an oven. Just lay it right on the top rack, then put an oven pan on the bottom rack to catch drippings. Set the oven to bake and turn it down as low as it goes. I'll walk buy and open the oven every now and then to let some heat out. It works great.
 
I've made it from both strips and ground meat, marinated and dry cured and that's why making your own is the way to go. You have a lot of control over the recipe and if you're using ground meat and using a jerky gun makes it a pretty quick and painless job.

I also used to mix the meat and seasonings and pack it into 1lb or 2lb bags, freeze it, and then cut it into 1/8" thick disks and dehydrate. Texture was similar to hard salami when done that way. Besides saving money the best thing about making your own is you know what's in it and you can alter any of the millions of recipes out there to suit your own taste. You like pepper, garlic, onion, add more and try it out.

You can use just about any cut of beef, pork, wild game, poultry and even fish to make jerky, you'll just have to alter the recipe and temp a bit. If you go with ground meat either use lean stuff like chuck or better cuz regular ground beef has too much fat and grease in it. Best bet is to buy a few chuck roasts when they're on sale, trim the fat and grind it yourself.

If you're gonna buy a dehydrator you can start with a cheaper one but you're better off with something that has temp control. The one I use has the heating element at the rear and fan driven so you never have to swap the racks out from bottom to top.

If you start making your own beef jerky it will make the storebought stuff look like shit.

Excaliber makes incredible dehydrators, stupid easy to use. Look up Alton Brown's jerky recipe and you will have the best tasting jerky you ever had.
 
Yes, I cook just about all my food from scratch. I make it a lot in the summer time in a food dehydrator. Soak the meat for 24 hours in the refrigerator in liquid smoke, soy sauce, brown sugar and dry it on the dehydrator. Delicious.
 
Do ya'll use liquid smoke when marinating your jerk before putting it the dehydrator? I notice a few recipes call for it, apparently it is just captured smoke in a liquid form, curious whether it gives the meat that smokey taste you would get if you used a smoker.

GO to walmart, buy a $35 smoker and learn to smoke it. It will make dehydrator jerky taste like storebought.

Additionally, the alton brown fan method is very good as well.
 
i havent made my own beef jerky per se but after soccer games and the like my feet, espeically the sides of my big toes get these calluses.

sometimes i bite them off with my teeth and eat them.

tastes salty.
 
Whenever I see threads like this and the juicer, I always wonder, how long have the peeps who are excited about this been using it? I mean, how many have been doing this for, say, 5 years.

If you are like me, I get shit, use it for a while, and it goes into the closet. I don't have time for such stuff (wish I did, but I have come, slowly and at stupid expense, that I have other priorities for now)

Ya it does give it a smoky taste. I've never used a smoker, too much work unless you have maybe an electric smoker.

I have the 9 rack Excalibur, making 10lbs of jerky at a time. It's literally impossible to have it in the house I want to eat it all day. It's that good.

Costco/Sam's Club is a great place to get bulk lean meat like eye of round etc. You can also get big jugs of soy sauce/Worchestshire sauce/pepper/onion powder/red pepper (most of the Alton Brown recipe) there as well.
