Just one. Gotta stay focused until it`s up and running at a decent level. But I always have several sites I`m maintaining or adding content to and building links to.
I'm only keeping maintanence on 3. They fill up the time whilst I work on my other method(s). Hopefully, if everything goes well I won't need those sites anymore though!
One is in maintenance mode (sort of), one I'm trying to get higher in the rankings, and another one's still just a baby site that I haven't even put any articles on yet. So: three, at the moment.
I have six that I'm currently working on. I had this idea that I'd work on five at a time. Well, I've recently decided that one at a time is probably the best. I'll create them in batches of ~5 and then make the homepage and let it start aging. Then I'm going back one at a time and picking over every detail of on-page SEO.
So batches of 5 get started then I'm adding content and tweaking each site one at a time till I call it "done". Done meaning it's not thin anymore.

A lot of people think more sites is more money but this is not true.
My advice is just focus your energie on 1 site and make this site super. And when this site is running good than you can focus on a other site.
I'm working on three sites. That's my limit. Otherwise, they all suffer. Depending on what I decide to do a couple of other niches, I might start two new sites and let two of my current ones just sit for awhile with just enough updates to keep them out of the supplemental index.
