Actually most of these domains are auction domains so you cant just click and buy you have to click, bid, hope no one else ups the bid, then if they do you re-bid, and snipe them at the dying minutes.

Oh yeah right I almost forgot you can't forget that you can loose out if the owner renews it as well.

Its an auction system so you bid, and if no one out bids you and the owner does not renew by the time the auction ends then you pay the money and get the domain.

If you bid and then the owner renews the domain the auction is closed and you don't loose any money.

You only pay when you win the bid and the owner has not renewed the domain.

No, you don't get a refund because the money is never paid. If the owner renews, then the auction is closed before it ends and your bid is cancelled. If you win, pay, and acquire the domain then it is now yours and the previous owner is shit-out-of-luck.

What if you win the auction, pay, and then while you are waiting for the domain to transfer, the owner renews?

This this is what will happen.

The domain will transfer to me in 1 week or less after auction close unless reclaimed by the original registrant (in which case, I am entitled to a full refund).

That is from GoDaddys TOS here is the full agreement when doing these types of auctions

1. I understand that my bid is a binding contract and that an $9.99 (COM), $9.99 (NET), $9.99 (ORG), $19.99 (CC), $7.99 (INFO), $14.99 (BIZ), $14.99 (NAME), $39.99 (TV), $9.99 (US), $9.99 (WS) one-year renewal (from the end of the domain's previous registration period) plus 20-cent ICANN fee if applicable will be added to the bid, if successful. I am responsible for payment within 48 hours of auction close, or the form of payment I used to purchase my TDNAM membership will be charged on the third day following the auction close. The domain will transfer to me in 1 week or less after auction close unless reclaimed by the original registrant (in which case, I am entitled to a full refund). I also (i) acknowledge that I have read and understand and (ii) agree to comply with and be bound by GoDaddy.com's Universal Terms Of Service, and the Escrow.Com agreement on winning bids of $500 or more.

2. I acknowledge the seller isn't eligible for escrow services, therefore, if my bid is the winning bid, this transaction will be handled through Transaction Assurance.

3. I acknowledge that if my winning bid is $500 or more, this transaction will be handled through Escrow.com and, to the extent necessary to facilitate the transaction, my personal information will be provided to Escrow.com. If my winning bid is less than $500, I acknowledge that this transaction will be handled through Transaction Assurance.
