Easy:

If he were simply looking for a media embed plugin I don't think he would have said "that lets visitors to my wordpress blog, add embeded youtube videoes?!" Why don't you read before you respond!

I dont think you will find a simple solution. For one allowing visitors to make posts of anything would require a minimum of author priv;s...
Probably your best bet is to use WPMU. Im sure there is a simple solution out there for that platform of wordpress. Also look into BuddyPress ...

I had a custom script developed last year which allows visitors to post media in comments. Completely different than posts....

Anyone else out there know of any plugins or hacks I would also like to know...

Simple then, just analyse the comment for a tag like how bb does it , take that code then place it into a default youtube embed code.

You'll need to set up the blog for multiple authors, either by adding members who can post into a group or by using one of the many platforms/plugins for membership management.

For handling the videos I recommend the plugin Viper's Video Quicktags -- it allows you to configure a standard size and style for multiple video sites and adds tags to the post edit page so that users can just click the YouTube or DailyMotion (or whatever) button and enter the video's ID.
