Wife and I had another kid this year, and "we" decided that it would be
best if I gave up my office upstairs and converted it into a nursery. As
a result of the changes this required, my desktop system is now the most
expensive paperweight evah -- I'm sort of at large about the house now, as
"we" decided that that works better.

So -- if you're looking for a top-notch secure desktop, I have one available.

What actually makes it "secure"? You say it has AES encryption on it but how is it implemented and what is it used for on the system?

From their website it makes it sound like it's just normal hardware with some open source/free software pre-installed but I figure I must be missing something for the 3 grand markup they have.

The whole drive is 'wrapped' (for lack of a better term) in the encryption process. The computer only functions properly when an external key is in place (in mine's case, a USB thumbdrive.)

Yeah, they are not for the frugal, to be sure. At the end of the day, one could say that indeed, it's just normal hardware with some FOSS installed, sure. But that also describes a Dell Inspiron with OpenOffice installed on it, and this is definitely a different sort of machine than the Dell. I've been very satisfied with it, and as mentioned above the reason for selling it is merely that it got obsoleted by a lifestyle change. The ongoing support from rS has been phenomenal and will transfer over to the new owner as well.
