Pandora is absolutely brilliant. PandoraJam is even better!

QuickSilver - launch and controler apps via keyboard
Firefox - if you're a web developer. Also the firebug plugin.
Netbeans - I develop ruby on rails with netbeans after ditching textmate
SuperDuper - backups
Macports - for all that ported open source
NetNewsWire - RSS reader
Caffeine - keep your desktop out of standby mode
Unrarx - unrar app.

I recently re-installed my Mac after the HD died, and that's basically what I bootstrapped my system with.
 
Another vote for Coda - i use it alot for instant editing and uploadng capability among other things.

Another one I like that's not so well known is ServerSkine - it keeps all your site account information in order - just make sure to always edit in the drawer mode and not teh grid mode - it will delete your whole file (it's free).

Also - not software, but you might as well pick up a 1/2 TB drive for brainless backups.

Another vote for Coda for frontend stuff, and for Transmit for FTPing.
If you're a writer, check out Scrivener, too .
