If you are interested in a domain that is being sold via domain brokers, and purchase it for say $5,000. What % goes to domainbrokers?

It varies, but 10-20% is the norm.
Sedo takes a minimum of $50 on the low end but 10% on the high end.
I think Moniker takes 15%.
